Pumpkin Bars
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
16 oz pumpkin puree
3 cups all purpose flour
2 teaspoons of baking powder
1 teaspoon baking soda
1 teaspoon salt
*Weezy’s extra addition
1 Tablespoon cinnamon
1 teaspoon of vanilla or maple extract
Preheat oven to 350 degrees
Mix together eggs, sugar, oil, and pumpkin. Stir together all dry ingredients, then combine wet and dry ingredients
Spread into a 15x10x1 inch pan. Bake for 25 to 30 minutes
Cream Cheese Frosting
3 oz cream cheese
1/2 cup butter
2 cups powdered sugar
1 teaspoon vanilla extract
Mix together room temperature cream cheese and butter.
Add powder sugar and vanilla
Mix together and then spread on cooled pumpkin bars.
I like to refrigerate them to enhance the flavor and texture of pumpkin and spices. cut into squares and enjoy!
